Broccolini and Grain Salad

Serves 4



400g broccolini, chopped
½ cup barley
½ cup freekeh
4 spring onion, white part only, chopped
1 bunch parlsey, chopped
1 bunch mint, chopped
1/3 cup dried currants
¼ cup sunflower seeds, toasted
¼ cup pepita seeds, toasted
6 tbsp extra virgin olive oil
2 tbsp lemon juice
Salt, to taste
100g Greek feta, crumbed


  1. Blanch broccolini, barley and freekeh separately in salted boiling water until just cooked. Drain well and refrigerate to cool.
  2. Once broccolini, barley and freekeh are cool, place in a large bowl along with spring onion, parsley, mint, currants, sunflower seeds, pepita seed, extra virgin olive oil and lemon juice. Mix well and season to taste.
  3. Place into a serving dish and top with crumbed Greek feta. Serve immediately.
